findit-learnit-doit: Cucumber Bread/Cake ¾ cup Shortening 1 ½ cups Sugar 2 Eggs 1 ½ cups whole, shredded Cucumber ½ teaspoon Salt 2 cups All-Purpose/Unbleached Flour 1 teaspoon Baking Soda 1 teaspoon Baking Powder ¼ cup buttermilk 1 teaspoon Vanilla Directions Preheat oven to 350 degrees. Cream together lard/shortening and sugar until fluffy. Add eggs and beat 2 more minutes. Add shredded cucumbers, mix. Sift together dry ingredients, add to creamed mixture alternately with buttermilk and vanilla. Pour into greased loaf/bread pan. Bake approximately 45 minutes. Makes 1 Loaf NEED TO TRY THIS ! I’m going to ask hubby to make this with me over easter <3
